99.9% Paleo Chocolate Chip Cookies

Stuff you'll need:
  • 1.5 cups Almond Flour (raw)
  • 1/4c extra virgin coconut oil
  • 1/4c 100% pure maple syrup
  • 1 large to extra large egg (cage-free)
  • 1/2tsp baking soda
  • 1/2tsp sea salt
  • 1/2tsp real vanilla extract (not the imitation crap!)
  • 3/4c Enjoy Life Semi-Sweet Mini Chips (dairy, soy, gluten and nut free chocolate chips)

How to make:
  1. Preheat oven to 375 degrees.
  2. In a mixing bowl combine all the dry ingredients - almond flour, baking soda, sea salt, mini chips
  3. In a separate bowl, whisk together the egg, maple syrup, and realvanilla extract
  4. Mix wet stuff into dry stuff, and whisk together til its well combined -it will get kinda thick and sticky
  5. Microwave the coconut oil for 30 seconds until melted.
  6. Pour the coconut oil into the cookie dough mixture, and continue to whisk until it is well combined
  7. Drop 3/4tbsp-sized, cookie dough balls onto a non-stick baking sheet - leave space for them to flatten and expand
  8. Bake for 8-10minutes -
    1. I've noticed the baking time can sometimes depend on the size of the cookie dough balls, and/or the thickness of the baking sheets... so keep an eye on them past 8mins.
    2. If you like 'em soft and chewy, pull 'em out around 8mins and leave them sit on the sheet for a minute, before placing them on cooling rack.
    3. If you life 'em a little crispy on bottom, leave them in for 10mins, but then pull them out and immediately move them to a cooling rack, or they'll burn.

Did a 9th rd of squat snatch at 125 and a few at 135. Should have done a few rds at 125.

FB @ 155
Started off doing between 35-40s, had 2 rounds of a minute (I wouldn't have made it up to the box without busting my teeth) and finished with a 35s. Really fun WOD.

FB 85lbs
all rounds around 1:20, squat snatches felt good. Box jumps are slow as usual. Missed one on the last round, lovely shin tumor has sprouted...
